If you are using a grill for meat, you want as low of an output as possible. A good way to do this is to make a double layer of aluminum foil over the food. You can buy the foil with very low reflectivity (for low reflectivity charcoal) or try food-safe electrically conductive tape. Once you cover it with foil, you won’t see the heat, and it will be effectively (and significantly) hotter inside than if you simply held it by the handle.
